Smoking the Catch Yes the mackerel are back and as fast as some folks can reel them in, others are getting the catch into the smokehouse. Mackerel are delicious raw, or cooked fresh, but don't keep well and don't freeze well, so if you've got a bunch, the logical alternative is to smoke them. They're some good too, you betcha.
